Pisco Sour

This is Peru’s answer to Mexico’s Magarita! Refreshing and delicious!

MISE EN PLACE

INGREDIENTS:

  • 2 Oz. Pisco (most liquor stores will carry this. I buy the Peruvian Pisco as opposed to the Chilean. The Chilean pisco is a little sweeter.)
  • 1 Oz. Lime juice
  • 3/4 Oz. simple syrup (one part sugar, one part water; heat until sugar is dissolved.  Let cool and keep refrigerated.)
  • 1 Pasteurized egg white from a medium egg
  • Angostura bitters for garnish

DIRECTIONS:

  • Fill a cocktail shaker with ice.
  • Add all the ingredients except for the Angostura bitters.
  • Shake vigorously until the shaker is frosted.
  • Strain into a cocktail glass of your choice (should not be too large) and sprinkle some Angostura bitters over the drink.
