LIGHT, EASY & DELICIOUS
This is another light meal that I developed for my daughter’s fitness students. It’s easy and delicious.
INGREDIENTS:
- For the Fish:
- 4 (4 to 5 oz.) tilapia filets
- 2 Tbsp butter at room temperature
- Zest from one lime
- Salt & Pepper to taste
- Paprika for finishing
- For the Couscous:
- 1 Cup couscous
- 1 3/4 Cup chicken broth
- 2 Tbsp salted butter
- 3 Tbsp pine nuts
- 3 Tbsp white wine
- Zest from one small lemon
- 1 Tbsp fresh lemon juice
- 1 Tsp kosher salt
- 1 Tsp. freshly ground pepper
INSTRUCTIONS:
- For the Fish:
- Preheat the oven to 375 degrees F
- Spray a heavy metal pan with cooking spray or use non-stick aluminum foil
- Soak fish in cold water or milk for 30 minutes or more then rinse and pat dry
- Place fish on prepared pan
- Divide butter into four parts and smear on fish
- Pour lime juice evenly over fish
- Season with salt and pepper
- Sprinkle zest over each filet
- Bake for approximately 8 to 10 minutes
- Sprinkle with paprika
- 221 Calories each
- For the Couscous:
- Melt butter in a small to medium sauce pan and brown on medium heat
- Add the pine nuts and continue to cook for 1 minute stirring often
- Add couscous and saute with the pine nuts for another minute stirring often
- Add the salt, pepper and wine and the chicken broth and bring to a boil
- Remove from heat, cover and let stand for 5 minutes
- Fluff with a fork and fold in the lemon zest.
- 1/2 Cup serving = 203 calories
