Baked Tilapia With Couscous

LIGHT, EASY & DELICIOUS

This is another light meal that I developed for my daughter’s fitness students. It’s easy and delicious.

MISE EN PLACE

INGREDIENTS:

  • For the Fish:
    • 4 (4 to 5 oz.) tilapia filets
    • 2 Tbsp butter at room temperature
    • Zest from one lime
    • Salt & Pepper to taste
    • Paprika for finishing
  • For the Couscous:
    • 1 Cup couscous
    • 1 3/4 Cup chicken broth
    • 2 Tbsp salted butter
    • 3 Tbsp pine nuts
    • 3 Tbsp white wine
    • Zest from one small lemon
    • 1 Tbsp fresh lemon juice
    • 1 Tsp kosher salt
    • 1 Tsp. freshly ground pepper

INSTRUCTIONS:

  • For the Fish:
    • Preheat the oven to 375 degrees F
    • Spray a heavy metal pan with cooking spray or use non-stick aluminum foil
    • Soak fish in cold water or milk for 30 minutes or more then rinse and pat dry
    • Place fish on prepared pan
    • Divide butter into four parts and smear on fish
    • Pour lime juice evenly over fish
    • Season with salt and pepper
    • Sprinkle zest over each filet
    • Bake for approximately 8 to 10 minutes
    • Sprinkle with paprika
    • 221 Calories each
  • For the Couscous:
    • Melt butter in a small to medium sauce pan and brown on medium heat
    • Add the pine nuts and continue to cook for 1 minute stirring often
    • Add couscous and saute with the pine nuts for another minute stirring often
    • Add the salt, pepper and wine and the chicken broth and bring to a boil
    • Remove from heat, cover and let stand for 5 minutes
    • Fluff with a fork and fold in the lemon zest.
    • 1/2 Cup serving = 203 calories
