Lemon-Garlic Roasted Asparagus

 

This is one of the easiest recipes you will ever encounter and yet so delicious and visually pleasing!! This is a great side dish for almost any protein or for a vegetarian meal.

INGREDIENTS:

  • 2 Pounds fresh asparagus, tough ends trimmed
  • 3 Tbsp. olive oil
  • 1 1/2 Tbsp. minced garlic
  • 2 Tsp. fresh lemon juice (or more if you like more tartness)
  • Salt and pepper to taste

INSTRUCTIONS:

  • Preheat the oven to 425 degrees F.
  • Toss asparagus, olive oil, salt, pepper and garlic in a large baking pan or glass dish.
  • Spread the asparagus evenly in the pan so that they are all in one layer.
  • Bake 10 to 20 minutes, depending on your tenderness preference.
  • Toss twice during the baking time.
  • Remove from the oven and toss with the lemon juice.
