This is one of the easiest recipes you will ever encounter and yet so delicious and visually pleasing!! This is a great side dish for almost any protein or for a vegetarian meal.
INGREDIENTS:
- 2 Pounds fresh asparagus, tough ends trimmed
- 3 Tbsp. olive oil
- 1 1/2 Tbsp. minced garlic
- 2 Tsp. fresh lemon juice (or more if you like more tartness)
- Salt and pepper to taste
INSTRUCTIONS:
- Preheat the oven to 425 degrees F.
- Toss asparagus, olive oil, salt, pepper and garlic in a large baking pan or glass dish.
- Spread the asparagus evenly in the pan so that they are all in one layer.
- Bake 10 to 20 minutes, depending on your tenderness preference.
- Toss twice during the baking time.
- Remove from the oven and toss with the lemon juice.
