Looking for a satisfying sweet treat but don’t want the calories that come with it? Try this dessert that has only 268 calories per serving and is very satisfying. It’s another recipe I developed for my daughter’s fitness group.
INGREDIENTS:
- For the Cake:
- 1 Box moist chocolate pudding-in-the cake mix
- 1 Can diet cola
- 3 Egg whites (I use extra large eggs)
- For the Sauce:
- 1 Box sugar free chocolate fudge instant pudding
- 3 Cups 2% milk (you can use 1% or skim if you want to reduce the calories further)
- 2 Tsp pure vanilla extract
- 4 Tbsp chocolate liqueur
- 4 Tbsp dark chocolate syrup (use regular if you can’t find dark)
- 1 Regular size container of Cool Whip Lite
- Strawberry for garnish
INSTRUCTIONS:
- For the Cake:
- Preheat the oven to 350 degrees F.
- In a bowl, beat the cake mix, cola and egg whites until smooth.
- Pour into a sprayed 9×13 cake pan.
- Bake according to box instructions.
- Let cake cool and then invert on a flat surface
- For the Sauce:
- With a hand mixer, beat all the ingredients for the sauce until smooth and refrigerate.
- When Ready to Serve:
- My serving method should yield 8 servings, 268 calories each.
- After the cake has completely cooled, cut circles out with a 3″ biscuit cutter.
- Ladle 1/4 cup of chocolate sauce on a dessert plate and place the cake disc on top of the sauce
- Put a dollop of cool whip on top and garnish with a strawberry (optional)
- For added presentation, drizzle some dark chocolate syrup over the whipped topping or sprinkle dark shavings.
