Light Chocolate Cake With Chocolate Sauce

Looking for a satisfying sweet treat but don’t want the calories that come with it? Try this dessert that has only 268 calories per serving and is very satisfying. It’s another recipe I developed for my daughter’s fitness group.

MISE EN PLACE

INGREDIENTS:

  • For the Cake:
    • 1 Box moist chocolate pudding-in-the cake mix
    • 1 Can diet cola
    • 3 Egg whites (I use extra large eggs)
  • For the Sauce:
    • 1 Box sugar free chocolate fudge instant pudding
    • 3 Cups 2% milk (you can use 1% or skim if you want to reduce the calories further)
    • 2 Tsp pure vanilla extract
    • 4 Tbsp chocolate liqueur
    • 4 Tbsp dark chocolate syrup (use regular if you can’t find dark)
  • 1 Regular size container of Cool Whip Lite
  • Strawberry for garnish

INSTRUCTIONS:

  • For the Cake:
    • Preheat the oven to 350 degrees F.
    • In a bowl, beat the cake mix, cola and egg whites until smooth.
    • Pour into a sprayed 9×13 cake pan.
    • Bake according to box instructions.
    • Let cake cool and then invert on a flat surface
  • For the Sauce:
    • With a hand mixer, beat all the ingredients for the sauce until smooth and refrigerate.
  • When Ready to Serve:
    • My serving method should yield 8 servings, 268 calories each.
    • After the cake has completely cooled, cut circles out with a 3″ biscuit cutter.
    • Ladle 1/4 cup of chocolate sauce on a dessert plate and place the cake disc on top of the sauce
    • Put a dollop of cool whip on top and garnish with a strawberry (optional)
    • For added presentation, drizzle some dark chocolate syrup over the whipped topping or sprinkle dark shavings.
