Light & Tasty Salad

This is an easy salad that presents beautifully and great as your salad course for company. When used with my recipe for lemon garlic vinaigrette, each salad is only 150 calories.

MISE EN PLACE

INGREDIENTS:

  • 4 Cups spring mix salad
  • 4 Plum tomatoes, quartered and seeded
  • 2 Yellow pepper, roasted, peeled, seeded and cut into strips
  • 4 Medallions of goat cheese
  • 1/2 Cup chopped pecans
  • Lemon-Garlic Vinaigrette

INSTRUCTIONS:

  • Lightly dress the spring mix salad and divide into 4 individual bowls.
  • Toss tomato quarters with a little of the vinaigrette and place 4 pieces around each salad.
  • Layer sliced roasted pepper on top of salad.
  • Lightly press goat cheese medallions on pecans and place on the side of the salad.
  • Serve with extra dressing on the side in case others like a more heavily dressed salad.
