Looking for a refreshing summer dessert that is healthy and satisfying? Look no further. A few years back, when my daughter owned a physical fitness boot camp, she asked me to come up with some healthy recipes for her clients. This is one of them.
INGREDIENTS:
- FRUIT:
- 1 Cup fresh or frozen strawberries
- 1 Cup fresh or frozen raspberries
- 1 Cup fresh or frozen blackberries
- 1 Cup fresh or frozen blueberries
- 2 Tbsp granulated sugar
- 2 Tbsp raspberry liqueur
- TOPPING:
- 6 Tbsp honey
- 2 Cups plain, nonfat Greek yogurt
- 1/2 Cup slivered or sliced almonds, pan toasted
DIRECTIONS:
- Mix fruit in a large bowl
- Sprinkle with granulated sugar and raspberry liqueur and toss gently so that all the fruit is coated
- Refrigerate for at least 4 hours or over night (recommended)
- For the topping, toast the almonds in a medium high heat pan until fragrant
- Blend the honey and yogurt well and keep refrigerated.
- When ready to serve, place 1/2 cup of the fruit in a small bowl or champagne glass, add a dollop of yogurt sauce and sprinkle with almonds and garnish with a fresh strawberry.
- This recipe makes 8 1/2 cup servings and is 180 calories per serving.
