Mixed Berry Dessert

Looking for a refreshing summer dessert that is healthy and satisfying? Look no further. A few years back, when my daughter owned a physical fitness boot camp, she asked me to come up with some healthy recipes for her clients. This is one of them.

MISE EN PLACE

INGREDIENTS:

  • FRUIT:
  • 1 Cup fresh or frozen strawberries
  • 1 Cup fresh or frozen raspberries
  • 1 Cup fresh or frozen blackberries
  • 1 Cup fresh or frozen blueberries
  • 2 Tbsp granulated sugar
  • 2 Tbsp raspberry liqueur
  • TOPPING:
  • 6 Tbsp honey
  • 2 Cups plain, nonfat Greek yogurt
  • 1/2 Cup slivered or sliced almonds, pan toasted

DIRECTIONS:

  • Mix fruit in a large bowl
  • Sprinkle with granulated sugar and raspberry liqueur and toss gently so that all the fruit is coated
  • Refrigerate for at least 4 hours or over night (recommended)
  • For the topping, toast the almonds in a medium high heat pan until fragrant
  • Blend the honey and yogurt well and keep refrigerated.
  • When ready to serve, place 1/2 cup of the fruit in a small bowl or champagne glass, add a dollop of yogurt sauce and sprinkle with almonds and garnish with a fresh strawberry.
  • This recipe makes 8 1/2 cup servings and is 180 calories per serving.
