This is one of my retro recipes that I got from a colleague in 1974. I hadn’t made it in years and decided to bring it back for the holidays. I now remember why I loved it so much. I altered it just a tad. It’s a great party pleaser even for non-oyster lovers. Give it a try. Thank you to Carol Collins who introduced me to this yummy spread.
INGREDIENTS:
- 8 oz. cream cheese
- 1 Tbsp. grated shallots
- 1 Can smoked oysters, drained, and finely chopped. (I like the Reese large canned smoked oysters.)
- 2 Tbsp. mayonnaise
- 2 Tsp steak sauce, divided (I used A-1)
- Garlic powder and salt to taste.
INSTRUCTIONS:
- Combine the cream cheese, shallots, mayonnaise, garlic powder, salt and 1 tsp steak sauce.
- In a separate dish, combine the chopped oysters and 1 tsp steak sauce.
- On sheet of plastic wrap, spread the cream cheese mixture into a rectangle no less than 1/4 inch thick.
- Spread the oysters over the cream cheese rectangle.
- Starting the wide part of the rectangle, begin lifting the plastic wrap and continue rolling into a log.
- Leave wrapped and refrigerate for at least an hour so the cheese log sets and then roll in freshly chopped parsley, chives or cilantro.
- Serve with your favorite crackers.
