I love this marinade for chicken. I’ve also used it for pork ribs.
INGREDIENTS:
- 1/2 Cup roughly chopped garlic
- 2 Tbsp kosher salt
- 1/2 Cup olive oil
- 1/2 Tbsp dry oregano
- 1 Tsp Cajun seasoning
- 1 Tsp smoked paprika (if you like your chicken on the spicy side, use hot paprika)
- 1 1/2 Cup juice from a sour orange (If you can’t find a sour orange, use half lemon and half orange. You can also purchase sour orange juice in a bottle at major and specialty grocery stores.)
INSTRUCTIONS:
- Combine all ingredients in a bowl and whisk well.
- Place poultry in a seal bag and add marinade
- Seal the bag making sure all air is released
- Let marinade at least 4 hours. Best to marinade over night.
- Cook on an outdoor grill, stove top grill or oven.
- Temperature should reach 165 degrees F
