Poultry Marinade

 

I love this marinade for chicken. I’ve also used it for pork ribs.

MISE EN PLACE

INGREDIENTS:

  • 1/2 Cup roughly chopped garlic
  • 2 Tbsp kosher salt
  • 1/2 Cup olive oil
  • 1/2 Tbsp dry oregano
  • 1 Tsp Cajun seasoning
  • 1 Tsp smoked paprika (if you like your chicken on the spicy side, use hot paprika)
  • 1 1/2 Cup juice from a sour orange (If you can’t find a sour orange, use half lemon and half orange. You can also buy Goya’s sour orange in a bottle in your super market.)

INSTRUCTIONS:

  • Combine all ingredients in a bowl and whisk well.
  • Place poultry in a seal bag and add marinade
  • Seal the bag making sure all air is released
  • Let marinade at least 4 hours. Best to marinade over night.
  • Cook on an outdoor grill, stove top grill or oven.
  • Temperature should reach 165 degrees F
