With so many of us overeating during this pandemic, I thought it would be good to add some lite but satisfying recipes. Believe me, I hate anything that has the word diet, low fat, fat free or lite in the title with few exceptions, so whatever I put on this blog as weight watcher friendly has passed my taste test. I hope you enjoy these yummy tacos.
INGREDIENTS:
- 1 Lb. white meat ground turkey
- 2 Tbsp. vegetable oil
- 1/2 Yellow onion, finely chopped
- 1/4 Green bell pepper, finely chopped
- 2 Large cloves of garlic, finely chopped
- 1/2 Cup of your favorite salsa (I used Herdez)
- 1/2 Cup beef broth
- 2 Tbsp tomato sauce
- 1 Tsp. ground cumin
- 1 Tsp. chili powder
- 1 Tsp. salt
- 1/2 Tsp pepper
- Shredded lettuce
- Diced tomato
- Queso fresco, monterey jack or Mexican blend cheese
- Taco shells of your choice.
INSTRUCTIONS:
- Preheat oven to 200 degrees F. Place the taco shells on a cookie sheet and place in the oven until ready to serve.
- Heat the oil in a medium sauce pan on medium heat.
- Add the onions, bell pepper, salt and pepper and saute until the vegetables are tender.
- Add the garlic and continue to saute for another 30 seconds.
- Add the turkey meat, breaking it up and mixing it well with the vegetables.
- Add the chili powder and ground cumin and mix well.
- When the turkey is cooked through and in small pieces, add the broth, salsa and tomato sauce.
- Stir well and cook on medium heat until nearly all the liquid evaporates stirring often.
- While the meat is simmering, have your condiments of lettuce, tomato and cheese ready to assemble your taco.
- Place the desired amount of meat in your taco shell and top with lettuce, tomato and cheese. Add extra salsa if desired.
