Gloria’s Ginger Snaps

 

More holiday sweetness! We were introduced to these cookies by our cousin and matron of honor almost 50 years ago and they remain an annual staple and one of our favorites. This recipe makes about 5 dozen cookies.

MISE EN PLACE

INGREDIENTS:

  • 3/4 Cup shortening
  • 1 Cup packed dark brown sugar
  • 1/4 Cup molasses
  • 1 Egg
  • 2 1/4 Cup all purpose flour
  • 2 Tsp. baking soda
  • 1/2 Tsp. salt
  • 1 Pkg. vanilla melt candies (found in the baking section of your market)
  • Granulated sugar

INSTRUCTIONS:

  • Preheat your oven to 375 degrees F.
  • Cream together the shortening, brown sugar, molasses and egg until fluffy.
  • Sift the dry ingredients together.
  • Gradually stir into the molasses mixture
  • Form into small balls
  • Roll the balls into granulated sugar and place 2″ apart on a greased or parchment paper lined cookie sheet.
  • Bake for approximately 10 minutes.
  • Cool slightly and remove from pan onto a wire rack to cool completely.
  • Melt the vanilla candy in the microwave 30 seconds at a time (stirring in between) until smooth enough to dip the cookies.
  • Let the melted candy cool a little, then dip each candy into the mixture about 1/4 to 1/2 of the way (I prefer 1/2) and place on a parchment paper until the candy has hardened.
  • Store in a tight lidded container.
