French Toast With Strawberry Topping

I’ve tried several French toast recipes and after gathering a little from this one and a little from that one, I came up with my version. It has pleased all to whom I have served it.  I hope you enjoy it as well.

MISE EN PLACE

INGREDIENTS:

For the French Toast:

  • 1 Loaf of either hallah or brioche bread (preferably unsliced so you can have thicker slices.) You should be able to get 16 3/4″ slices from a one pound or bigger loaf.
  • 4 Extra large eggs and three egg yolks from three extra large eggs
  • 3 Tbsp granulated sugar
  • 2 Cups half and half
  • 1 Cup heavy cream
  • 3 Tsp good vanilla extract
  • 1/8 Tsp salt
  • Butter for grilling the toast

For the Strawberry Topping:

  • 4 Tbsp of granulated sugar
  • 1 Lb. fresh strawberries, quartered and hulled
  • 1 Tbsp orange or raspberry liqueur

DIRECTIONS:

For the Strawberry Topping:

  • Mix all the ingredients well and let stand until the sugar has dissolved and the mixture is syrupy. I like to do these the day before using. They will last a good week.
  • By the way, it’s also a great ice cream topping.

For the French Toast:

  • Whisk the eggs, egg yolks, sugar, half and half, cream, vanilla and salt in a bowl until well blended.
  • Dip the bread slices in the egg mixture until well soaked and place on a buttered griddle or pan over medium heat.
  • Grill until light brown on each side. If you are serving more than two people you can keep the toast in a 200 degree oven to keep warm.
  • Sprinkle the toast with powdered sugar and top with the strawberries.
