Ground Lamb

Q: What do you do with ground lamb? Something easy!

A: You can go to my recipe for picadillo and substitute the lamb for the ground meat. That dish can also be made with ground turkey. Another easy way to use the ground lamb is to make a meat loaf. If you think lamb is too strong a flavor, mix it with ground beef and/or pork and make a simple meatloaf. Of course one of the most iconic dishes using ground lamb is Shepherds Pie! For this you could use my picadillo recipe, omit the olives and capers and add dice carrots, peas, and corn (or a package of frozen mixed vegetables). Put that in a casserole, ice it with some mashed potatoes and bake in the oven at 350 degrees F for approximately 30 minutes or until heated through and the potatoes take on some color.
