Tomato Tart

 

This is an easy and delicious dish that is great as a side dish or as a main dish with a good salad.

MISE EN PLACE

INGREDIENTS:

  • 1 Sheet of puff pastry
  • 1 Large tomato or two small ones
  • 1/2 Cup chimichurri sauce or your favorite pesto sauce.
  • 1 1/2 Cups grated gruyere cheese
  • 1 egg
  • 1 Tbsp. heavy cream
  • Salt and pepper to taste

INSTRUCTIONS:

  • Preheat oven to 375 degrees F.
  • Lightly flour the sheet of puff pastry. Using a lightly flour dusted rolling pin, roll out to a 10 by 14 rectangle.
  • Place the puff pastry on a parchment lined cookie sheet.
  • Brush 1/2 cup of chimichurri sauce on the puff pastry, leaving a little more than an inch on all sides.
  • Distribute the cheese over the surface of the chimichurri.
  • Slice the tomatoes very thin and place on paper towels to drain the moisture.
  • Layer the tomatoes over the cheese overlapping as necessary.
  • Salt and pepper the tomatoes.
  • Fold the sides of the puff pastry barely covering the edges of the tomatoes.
  • Beat the egg and cream and brush over the pastry.
  • Make some slits on the edges of the pastry.
  • Bake for 20 to 30 minutes or until golden brown.

VARIATIONS: If you wish to make this dish even heartier, you can crumble cooked bacon on top other meats such as thin pieces of ham or prosciutto. You can also choose one of your favorite cheeses.
